Ingredients
150g Tomato&Olives cheese from Max&Bien
3 truss tomatoes
150g punnet of fresh strawberries
Sprig of basil leaves
3 tbsp balsamic vinegar
1 baguette
Method:
- Slice the baguette diagonally.
- Lightly brown the slices under the grill until they are crunchy.
- Halve the tomatoes and remove the juicy parts. Chop the remainder into evenly sized cubes measuring approx. 1cm.
- Remove the green bits from the strawberries before chopping them into evenly sized cubes measuring approx. 1cm.
- Finely chop the basil leaves into pieces measuring approx. 0.5cm.
- Chop the cheese into evenly sized cubes measuring approx. 1cm.
- Mix the chopped tomatoes, strawberries, basil and cheese together.
- Add 3 tbsp of balsamic vinegar and season with salt and pepper.
- Generously top each toasted slice of baguette with the tomato and strawberry mixture.
